At Wild Thyme Catering we take great pride in every single item we create for our valued clients. Whether we are creating an unforgettable experience for 200 guests, or preparing delicious take-home meals in our new Food Shop, you can always be sure you’re getting the best. Take our house-smoked salmon for example…

It all begins in Chile, where our salmon is sustainably raised in clean deep waters that give it a fatty flesh that keeps it moist. Our salmon is then flown in overnight and arrives fresh at our kitchen the following day. Next, Chef Rick and his team get to work soaking Cedar planks that the salmon will be cured on, smoked on, and served to your guests on!

Sprayed with Jack Daniels and Canadian maple syrup to enhance the salmon’s flavour, the curing process begins as the apple wood chips are heated in our kitchen’s smoker box. Now it’s time for magic! Smoking away, the smoker box is placed in our rational oven (imported from Germany!), to smoke, roast and infuse just the right amount of moisture into your delicious salmon.

Out of the rational oven, each piece is vacuum-sealed on the cedar to lock in the smoke, moisture and freshness. Now it is ready for you to treat yourself…. even share with a friend… or not....
