Herb seared supreme of chicken with Marsala wine reduction 
Rosemary grilled breast of chicken with Ricks signature white mushroom and thyme cream sauce 
Braised beef short rib marinated with porcini dust braised for 12 hours, served with
 wild mushroom and port regu
Herb crusted prime rib of beef, slow roasted with rosemary au jus 
Fresh Atlantic salmon fillet cured with bourbon and  maple baked on ceder 
Slow roasted loin of pork with artisan grain mustard crust and jus

Vegetarian Option

A braise of root vegetables, squash, chickpeas and lentils in a light curried tomato sauce 

All buffet dinners come with chefs choice of seasonal vegetables, rosemary roasted new potatoes and freshly baked artisan dinner rolls with whipped butter and organic free trade coffee on dessert buffet table
