Baby spinach with oyster mushrooms, fresh strawberries, hearts of palm & grainy mustard vinaigrette
   Heritage field greens with shaved fennel and heirloom carrots, herbs with aged balsamic vinaigrette and extra virgin olive oil
  Roasted sugar beet salad with rocket, feta cheese and orange, star anisegastrique
   Penne pasta tossed with grilled vegetables (zucchini, eggplant, sweet peppers) kalamata olives, goats cheese and fresh basil with Rick’s sundried tomato vinaigrette
  Quinoa and cherry tomato salad with black olives and feta cheese with oregano vinaigrette

Main Course

   Breast of chicken marinated with chard lemon and fresh rosemary with vinaigrette of roasted baby tomatoes, capers and black olives
 Herb seared supreme of chicken with white mushrooms, shallots, fresh thyme and cream 
   Supreme of chicken stuffed with goats cheese, arugula and sun dried tomatoes with 
Marsala wine reduction
Beef short rib marinated with Porcini dust braised with wild mushroom ragu
 Dry aged AAA beef tenderloin, port wine reduction infused demi-glace and assorted wild mushrooms and white truffle
   Herb crusted prime rib of beef, slow roasted with rosemary au jus 
   Grilled Atlantic salmon filet, citrus salsa and chardonnay beurre blanc 
   Whole roasted suckling pig carved at the buffet (also available carved for drop off service)
   Dijon Roasted pork tenderloin with fresh apple and apricot chutney

Pasta

Penne noodles, tossed with grilled zucchini, sweet peppers and sweet basil tomato sauce 
  Fresh lasagna noodles layered with grilled vegetables (zucchini, peppers, eggplant, oven dried tomatoes, basil and spinach) and ricotta cheese all infused with rosemary oil and aged white balsamic, topped with double reduced tomato sauce 
  Homemade meat and cheese lasagna or Handmade Cheese and spinach cannelloni with
sweet tomato basil sauce 
  Rigatoni noodles baked with gorgonzola and roasted Jamaican pumpkin cream sauce,
 spinach and fresh peas 
  Penne noodles with mushroom and thyme cream sauce, sundried tomatoes and grilled chicken 

All buffet dinners come with chefs choice of seasonal vegetables, rosemary roasted new potatoes, freshly baked assorted dinner rolls with whipped butter and organic free trade coffee service
